2. Combine the water, raisins, carrots, and spices in a saucepan. Bring to a boil and simmer for 8 minutes. Add salt and sugar and simmer for another 2 minutes. Now mix the rest of the ingredients.
3. Turn off the stove and keep stirring gradually as the mixture cools.
4. In a large mixing bowl, combine the mixture of flour, baking powder, carrot and raisins. Fold the ingredients together.
5. Pour the batter into a lightly oiled baking tin and bake uncovered for about 50 minutes in the oven. Keep an eye on it after half an hour, because all ovens are slightly different. When it looks ready, poke the center of the cake with a toothpick, if no batter sticks to the toothpick, remove the pan from the oven and let it cool for 10 minutes.
